This healthy homemade granola recipe is an easy, healthy, comforting and delicious dish that’s sure to set you up for the day! Most store-bought granola is high in sugar, contains unhealthy saturated fats and oils, and is packed full of fillers and unnecessary ingredients so it’s good to know and control what's in there.
INGREDIENTS:
2 cups raw, whole rolled oats
½ cup sliced raw almonds
¼ cup raw sunflower seeds
¼ cup macadamias
Sultanas, cranberries, goji berries, inca berries, mulberries, & blueberries (’Luxury Berry Mix‘ can be bought from Woolworths)
1 tbsp raw honey
2 tbsp olive oil or grape seed oil
¼ tsp vanilla extract
1 large pinch fine sea salt
INSTRUCTIONS
Preheat the oven to 300º F (177° C). (If your oven runs cool or is older, 325º F also works.)
Combine the oats, oil, honey, vanilla extract, and salt in a large bowl (mixing bowl is best) and give it a quick stir.
Spread this mixture in an even layer on a rimmed baking sheet or sheet pan lined with parchment paper and bake for 10-12 minutes until toasted. Keep an eye on it throughout and mix further by partially pulling it from the oven if necessary.
Once the oats are evenly lightly toasted add the nut mix. Be sure to mix well through the other ingredients, so there aren’t any chunks. Bake for further 5-10 minutes. Note that macadamias can burn quickly so you can keep these out of the oven entirely or add them with the fruit at the very end if preferred.
Add the fruit mix. Be sure to mix well and break up the fruits so there aren’t any chunks. Bake for further 2-3 minutes. These don‘t take long at all but by heating them you’re activating them making it easier for your digestive system to extract the goodness later.
Cool 10-15 minutes before serving or storing. Serve with Greek yoghurt or milk (or milk alternative) and your favourite fresh fruit! Yum!
NOTES
Double or even triple the recipe to bake a batch for the family. Just increase the cooking time by another 30-50% or possibly more. It depends on how toasted you like your granola! Regardless of the total time I like to check on it every 5-8 mins and mix around, always exposing the moister mixture underneath, to bake evenly.
Homemade granola will taste like burnt popcorn if you overcook it; keep it at a low temperature to let it bake slowly and evenly.
Oats are mostly gluten-free by nature, but most are held in facilities that contain gluten. Check the package label and buy certified gluten-free oats if you are concerned with any gluten content.
This granola can be kept in an airtight container in a cool, dry place for up to 2 weeks. I keep mine in a mason jar in the cupboard and in a BPA-free plastic bag when traveling.
